Ingredients (for 1 rectangular baking pan)

  1. 500gr Mascarpone cheese
  2. 5 eggs (room temperature)
  3. 10 Tablespoons of granulated sugar
  4. Coffee
  5. Ladyfingers (in Italian “savoiardi”, can be found in most stores, Edeka, Rewe, etc..)

Instructions:

  1. Make some coffee and let it cool down.
  2. Separate the yolks from the whites and using an electric whisk, whisk the whites with a pinch of salt until they are firm and you get stiff peaks, then put them aside in the fridge.
  3. Whisk the egg yolks and the granulated sugar together until light and foamy, for about 5/8 minutes.
  4. Then add the mascarpone (in 2 or 3 times) cheese and keep whisking it on medium speed until combined.
  5. With a normal spatula or wooden spoon start to add the egg whites to the mascarpone cream a bit at a time, it is important to move gently and slowly from the bottom to the top.
  6. Take the baking pan and spread a thin layer of the cream on the bottom.
  7. Create a first layer of ladyfingers by soaking one at a time in the cold coffee (2 seconds max) and by putting them in the tray with the soaked side upwards.
  8. When you finished the first layer of ladyfingers cover them with half of the mascarpone cream.
  9. Do another layer of ladyfingers and cover it with the remaining cream.
  10. Put in the fridge for at least 5-6 hours, before serving it sift a layer of cocoa powder on top!
