**Ingredients** (for 1 rectangular baking pan) - 500gr Mascarpone cheese - 5 eggs (room temperature) - 10 Tablespoons of granulated sugar - Coffee - Ladyfingers (in Italian "savoiardi", can be found in most stores, Edeka, Rewe, etc..) **Instructions:** - Make some coffee and let it cool down. - Separate the yolks from the whites and using an electric whisk, whisk the whites with a pinch of salt until they are firm and you get stiff peaks, then put them aside in the fridge. - Whisk the egg yolks and the granulated sugar together until light and foamy, for about 5/8 minutes. - Then add the mascarpone (in 2 or 3 times) cheese and keep whisking it on medium speed until combined. - With a normal spatula or wooden spoon start to add the egg whites to the mascarpone cream a bit at a time, it is important to move gently and slowly from the bottom to the top. - Take the baking pan and spread a thin layer of the cream on the bottom. - Create a first layer of ladyfingers by soaking one at a time in the cold coffee (2 seconds max) and by putting them in the tray with the soaked side upwards. - When you finished the first layer of ladyfingers cover them with half of the mascarpone cream. - Do another layer of ladyfingers and cover it with the remaining cream. - Put in the fridge for at least 5-6 hours, before serving it sift a layer of cocoa powder on top!
